{"id":1757,"date":"2026-01-15T11:30:06","date_gmt":"2026-01-15T10:30:06","guid":{"rendered":"https:\/\/www.uni.lu\/lcsb-fr\/?post_type=news&#038;p=1757"},"modified":"2026-01-15T11:30:08","modified_gmt":"2026-01-15T10:30:08","slug":"riz-froid-et-parkinson-quand-alimentation-influence-notre-cerveau","status":"publish","type":"news","link":"https:\/\/www.uni.lu\/lcsb-fr\/news\/riz-froid-et-parkinson-quand-alimentation-influence-notre-cerveau\/","title":{"rendered":"Riz froid et maladie de Parkinson : quand l&rsquo;alimentation influence notre microbiote puis notre cerveau"},"content":{"rendered":"\n<section class=\"wp-block-unilux-blocks-free-section section\"><div class=\"container xl:max-w-screen-xl\">\n<p>L&rsquo;amidon r\u00e9sistant, pr\u00e9sent dans les pommes de terre, le riz ou les p\u00e2tes cuits puis refroidis, est non seulement le dernier sujet \u00e0 la mode sur les blogs alimentaires et parmi les passionn\u00e9s de nutrition, mais il s&rsquo;av\u00e8re que son impact sur notre intestin est \u00e9galement \u00e9tudi\u00e9 dans le contexte des maladies neurod\u00e9g\u00e9n\u00e9ratives. Une \u00e9quipe de chercheurs, dont les travaux de recherche portent sur le microbiote intestinal, l\u2019ensemble des micro-organismes vivant dans notre syst\u00e8me digestif, a r\u00e9cemment observ\u00e9 qu&rsquo;un r\u00e9gime alimentaire enrichi en amidon r\u00e9sistant avait des effets prometteurs sur les sympt\u00f4mes de la maladie de Parkinson. <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0889159125004593?via%3Dihub\" target=\"_blank\" rel=\"noreferrer noopener\">Leur \u00e9tude vient d&rsquo;\u00eatre publi\u00e9e dans la revue scientifique <em>Brain, Behavior, and Immunity<\/em>.<\/a><\/p>\n\n\n\n<h3 class=\"has-text-align-left wp-block-unilux-blocks-heading\"        id=\"une-maladie-neurodegenerative-qui-pourrait-trouver-son-origine-dans-lintestin\"\n    >\nUne maladie neurod\u00e9g\u00e9n\u00e9rative qui pourrait trouver son origine dans l&rsquo;intestin<\/h3>\n\n\n\n<p>Si la plupart des gens associent la maladie de Parkinson au cerveau, moins nombreux sont ceux qui connaissent son impact sur l&rsquo;intestin. En effet, dans cette maladie neurod\u00e9g\u00e9n\u00e9rative, le syst\u00e8me nerveux ent\u00e9rique qui innerve notre syst\u00e8me digestif est touch\u00e9 tr\u00e8s t\u00f4t. Des alt\u00e9rations du microbiote intestinal entra\u00eenent \u00e9galement des sympt\u00f4mes gastro-intestinaux, comme la constipation, au premier stade de la maladie, avant m\u00eame l&rsquo;apparition des sympt\u00f4mes classiques. Les changements observ\u00e9s parmi les micro-organismes pr\u00e9sents dans l&rsquo;intestin des patients int\u00e9ressent particuli\u00e8rement les scientifiques qui \u00e9tudient cette maladie car ils semblent favoriser la neuroinflammation et aggraver les m\u00e9canismes pathologiques. \u00ab Il existe de plus en plus de preuves que le microbiote intestinal joue un r\u00f4le important dans la maladie de Parkinson et nous savons par ailleurs que l&rsquo;alimentation fa\u00e7onne la structure et le fonctionnement du microbiote \u00bb, explique le <a href=\"https:\/\/www.uni.lu\/lcsb-en\/people\/paul-wilmes\/\" target=\"_blank\" rel=\"noreferrer noopener\">professeur Paul Wilmes<\/a>, responsable de l\u2019\u00e9quipe <a href=\"https:\/\/www.uni.lu\/lcsb-en\/research-groups\/systems-ecology\/\" target=\"_blank\" rel=\"noreferrer noopener\">Systems Ecology<\/a> au the <a href=\"https:\/\/www.uni.lu\/lcsb-fr\/\" target=\"_blank\" rel=\"noreferrer noopener\">Luxembourg Centre for Systems Biomedicine<\/a> (LCSB). \u00ab Agir de fa\u00e7on cibl\u00e9e sur l\u2019alimentation constitue donc une piste prometteuse pour soulager les sympt\u00f4mes de la maladie, d&rsquo;autant plus que ce genre d\u2019approche est g\u00e9n\u00e9ralement bien tol\u00e9r\u00e9e et bien accept\u00e9e par les patients. \u00bb<\/p>\n\n\n\n<h3 class=\"has-text-align-left wp-block-unilux-blocks-heading\"        id=\"lalimentation-un-outil-pour-ameliorer-la-qualite-de-vie-des-patients\"\n    >\nL&rsquo;alimentation, un outil pour am\u00e9liorer la qualit\u00e9 de vie des patients<\/h3>\n\n\n\n<p>L&rsquo;\u00e9quipe du Prof. Wilmes, en collaboration avec le groupe du professeur Brit Mollenhauer de la clinique Paracelsus Elena \u00e0 Kassel, s&rsquo;est ainsi r\u00e9cemment int\u00e9ress\u00e9e au potentiel de l&rsquo;amidon r\u00e9sistant. Lorsqu&rsquo;il est consomm\u00e9, ce glucide complexe traverse l&rsquo;estomac et l&rsquo;intestin gr\u00eale sans \u00eatre absorb\u00e9 et atteint le gros intestin o\u00f9 il est dig\u00e9r\u00e9 par divers micro-organismes. Dans le cas de la maladie de Parkinson, il pourrait, en association avec d&rsquo;autres fibres alimentaires, contribuer \u00e0 moduler le microbiote intestinal et \u00eatre ainsi b\u00e9n\u00e9fique aux patients. L&rsquo;amidon r\u00e9sistant est pr\u00e9sent naturellement dans diff\u00e9rents aliments comme les bananes vertes, les haricots, les graines et les noix, et peut \u00e9galement \u00eatre form\u00e9 en cuisant puis en laissant refroidir des pommes de terre, du riz ou des p\u00e2tes.<\/p>\n\n\n\n<p>Dans le cadre d&rsquo;une \u00e9tude pilote, l&rsquo;\u00e9quipe du LCSB a suivi 74 patients atteints de la maladie de Parkinson pendant deux \u00e0 quarante semaines. Ces derniers avaient adopt\u00e9 diff\u00e9rents r\u00e9gimes alimentaires&nbsp;: un r\u00e9gime conventionnel, un r\u00e9gime enrichi en amidon r\u00e9sistant ou un r\u00e9gime riche en fibres classique. Les chercheurs ont r\u00e9guli\u00e8rement pr\u00e9lev\u00e9 des \u00e9chantillons de selles et de sang, et recueilli des donn\u00e9es cliniques, pharmacologiques et nutritionnelles, ce qui leur a permis de comparer en d\u00e9tail les effets de ces diff\u00e9rents r\u00e9gimes. \u00ab Nous avons analys\u00e9 la structure du microbiote intestinal, son potentiel fonctionnel et les mol\u00e9cules pr\u00e9sentes dans le sang et les selles \u00e0 l&rsquo;aide de m\u00e9thodes de pointe telles que le s\u00e9quen\u00e7age <em>shotgun<\/em> et les approches multi-omiques \u00bb, explique <a href=\"https:\/\/www.uni.lu\/lcsb-en\/people\/viacheslav-petrov\/\" target=\"_blank\" rel=\"noreferrer noopener\">Dr Viacheslav Petrov<\/a>, premier auteur de l&rsquo;\u00e9tude et post-doctorant au sein du groupe Systems Ecology. \u00ab En association avec des questionnaires sur les sympt\u00f4mes et le ressenti des patients, cela nous a donn\u00e9 un tr\u00e8s bon aper\u00e7u de l&rsquo;impact des r\u00e9gimes riches en amidon r\u00e9sistant et en fibres alimentaires. \u00bb<\/p>\n\n\n\n<h3 class=\"has-text-align-left wp-block-unilux-blocks-heading\"        id=\"une-etude-pilote-aux-resultats-prometteurs\"\n    >\nUne \u00e9tude pilote aux r\u00e9sultats prometteurs<\/h3>\n\n\n\n<p>Leurs conclusions r\u00e9v\u00e8lent que l&rsquo;ajout d&rsquo;amidon r\u00e9sistant et de fibres dans l&rsquo;alimentation, m\u00eame pendant une courte p\u00e9riode, remod\u00e8le le microbiote intestinal des participants, entra\u00eenant une augmentation des bact\u00e9ries b\u00e9n\u00e9fiques, notamment les esp\u00e8ces du genre <em>Faecalibacterium<\/em>, et une diminution des pathog\u00e8nes opportunistes. Lorsqu&rsquo;elle est prolong\u00e9e pendant plusieurs semaines, la consommation d&rsquo;amidon r\u00e9sistant pr\u00e9sente d&rsquo;autres avantages, allant d&rsquo;une augmentation des mol\u00e9cules anti-inflammatoires dans les selles et le sang \u00e0 une am\u00e9lioration des sympt\u00f4mes moteurs et non moteurs.<\/p>\n\n\n\n<p>\u00ab Le suppl\u00e9ment en amidon r\u00e9sistant fournit des ressources aux micro-organismes b\u00e9n\u00e9fiques pour la sant\u00e9 pr\u00e9sents dans le gros intestin \u00bb, explique Dr Petrov. \u00ab On observe donc une modification de la composition du microbiote intestinal qui est \u00e9troitement li\u00e9e aux fonctions qu\u2019il peut remplir, par exemple la capacit\u00e9 de ces micro-organismes \u00e0 former des biofilms qui prot\u00e8gent contre les l\u00e9sions intestinales. Ces changements ont \u00e9galement un impact sur l&rsquo;activit\u00e9 m\u00e9tabolique et la r\u00e9ponse inflammatoire de l&rsquo;organisme. \u00bb La cons\u00e9quence la plus frappante est bien s\u00fbr la nette am\u00e9lioration observ\u00e9e au niveau des sympt\u00f4mes et de la qualit\u00e9 de vie des patients.<\/p>\n\n\n\n<h3 class=\"has-text-align-left wp-block-unilux-blocks-heading\"        id=\"explorer-les-liens-complexes-entre-le-microbiote-et-les-maladies-neurodegeneratives\"\n    >\nExplorer les liens complexes entre le microbiote et les maladies neurod\u00e9g\u00e9n\u00e9ratives<\/h3>\n\n\n\n<p>Si cette \u00e9tude met en \u00e9vidence que l\u2019alimentation peut \u00eatre utilis\u00e9e efficacement pour moduler le microbiote intestinal et g\u00e9rer les sympt\u00f4mes de la maladie de Parkinson, les travaux de l\u2019\u00e9quipe Systems Ecology ne cessent de d\u00e9voiler \u00e0 quel point les micro-organismes pr\u00e9sents dans notre intestin joue un r\u00f4le aux multiples facettes. \u00ab Nous sommes bien s\u00fbr tr\u00e8s heureux d&rsquo;obtenir des r\u00e9sultats qui peuvent directement d\u00e9boucher sur des recommandations nutritionnelles et ainsi aider les patients \u00bb, d\u00e9clare le professeur Wilmes. \u00ab Cependant, nos recherches montrent \u00e9galement \u00e0 quel point les liens entre l&rsquo;intestin et le cerveau sont complexes. Plus nous apprenons, plus nous nous posons de questions. Le microbiote est-il simplement affect\u00e9 par la maladie ou peut-il d\u00e9clencher son apparition&nbsp;? Ou bien, au contraire, pourrait-il avoir un r\u00f4le protecteur ? \u00bb<\/p>\n\n\n\n<p>Certaines des publications r\u00e9centes de l&rsquo;\u00e9quipe ont par exemple montr\u00e9 que le microbiote intestinal est d\u00e9j\u00e0 perturb\u00e9 aux tout premiers stades de la maladie de Parkinson, notamment chez les personnes atteintes de trouble du comportement en sommeil paradoxal. Ces changements pr\u00e9coces affectent des fonctions cl\u00e9s du microbiote, qui contribuent normalement \u00e0 r\u00e9guler le syst\u00e8me immunitaire et le fonctionnement du cerveau, et ont donc un impact global sur la sant\u00e9. Dans le cadre du projet <a href=\"https:\/\/www.uni.lu\/lcsb-en\/research-projects\/expobiome-deciphering-the-impact-of-exposures-from-the-gut-microbiome-derived-molecular-complex-in-human-health-and-disease\/\" target=\"_blank\" rel=\"noreferrer noopener\">ExpoBiome<\/a> lanc\u00e9 en 2020 gr\u00e2ce \u00e0 un financement de l\u2019<a href=\"https:\/\/erc.europa.eu\/homepage\" target=\"_blank\" rel=\"noreferrer noopener\">ERC<\/a> et d\u2019une bourse \u00ab&nbsp;Proof of Concept&nbsp;\u00bb obtenue en 2025, l&rsquo;\u00e9quipe se penche \u00e9galement sur certaines petites prot\u00e9ines produites par le microbiote intestinal. Ces derni\u00e8res peuvent d\u00e9clencher l&rsquo;agr\u00e9gation de l&rsquo;\u03b1-synucl\u00e9ine, une des caract\u00e9ristiques de la maladie de Parkinson. Son d\u00e9vouement envers les patients et sa passion in\u00e9branlable \u00e0 faire progresser notre compr\u00e9hension de la maladie de Parkinson constituent la pierre angulaire de ce travail. Son souvenir perdure au travers des id\u00e9es et des coll\u00e8gues qu&rsquo;il a inspir\u00e9s, de l&rsquo;esprit collaboratif qu&rsquo;il incarnait et des patients dont il s&rsquo;occupait avec
